Apple baked bean casserole

What a yummy side dish, it works really well with pork, and ill love the mix of hot and sweet ( if you don’t like it hot, don’t use jalapeños )

  • 5 strips bacon ( or as much needed to cover the beans )
  • 1 cup onion, diced
  • 2 cans Boston-style baked beans
  • 2 Granny Smith apple, finely diced
  • 1 tablespoon prepared mustard
  • ¼ cup brown sugar
  • 1 teaspoon salt
  • 2 fresh jalapeños, sliced (optional )
1) Preheat the oven to 350 degrees.  Coat a 2-quart baking dish with nonstick cooking spray.  In a large bowl, combine all the ingredients except bacon and mix well.  Pour into covered baking dish and lay raw strips of bacon on top. Bake for approximately 45 minutes or until thick and bubbly.  Uncover and bake for 5 more minutes.
