Asian inspired duck salad

Delicious lunch, quick and easy to make, if you love asian food, you definitely like this

  • 125 g lamb's lettuce
  • 2 duck breasts, prepared, and diced
  • ¼ red onion, finely sliced
  • ½ fennel bulb, finely diced
  • dressing
  • 2 tbsp rice wine vinegar
  • 2 tbsp sugar
  • 1 tbsp fish sauce
  • 1 tbsp low sodium soy sauce
  • 2 tbsp dark sesame oil
  • 1-2 tbsp sambal oelek , (chili paste)
1) In a big bowl whisk together rice vine vinegar and sugar till sugar is dissolved, and the rest of dressing ingredients, set aside.
Dice the fennel finely, slice the onion and dice the prepared duck breast in bite size pieces.
Toss lamb’s lettuce, fennel, onion and duck in the dressing so everthing is coated, transfere to serving dish immediately, with hands or thongs. You can choose to serve the leftover dressing in a little bowl on the side, if someone fancy more dressing.
