Cheese tortellini and sausage

A dish that will for sure be your new comfort food go-to, If you are a bit late on it you can do it like I did, in a dutch oven in a oven preheated to 200ºC (400ºF), tasted incredible so no worries if you don't have to slow cook or if you don't have a slow cooker.

  • 1 (19 oz.) bag frozen cheese tortellini
  • 1 lb. sausage (I used Chorizo)
  • 1 bag fresh spinach
  • 2 cans Italian style diced tomatoes
  • 2 cans low-fat chicken broth
  • 1 (8 oz.) Mascarpone, cut into cubes

1) Brown the sausage in a skillet on the stove top until cooked and crumbled. Drain.

Add the sausage and remaining ingredients to a 6-quart slow cooker. Stir to combine. Cook, on LOW for 5 hours, stirring twice during cooking.
