Chicken sandwich with chipotle mayo

Tasty chicken sandwich, easy to make, great for any picnic or lunch box, for whom that like a little spice.

  • 2 sandwich rolls of your choice
  • 2 chicken breast fillets without skin, pounded flat, not to thin
  • 4 tsp Hellman's Light Mayonnaise
  • 1 tbsp adobo sauce from chipotle peppers, (or more if you like it hot )
  • 1 small shallot, thinly sliced
  • 4 dill pickled cucumbers, sliced lengthwise
  • 8 slices of bacon
  • romaine lettuce leaves, sliced
1) Cook bacon till crisp and golden, set aside
Cook the flattened chicken , 2 min on each side or till the juices runs clear
In a bowl mix adobo sauce an mayo, half bread and spread mayo on the top and bottom, layer with lettuce, chicken, dill pickled cucumber, bacon, onion and top bread
