Chicken thighs cordon bleu

Great for the posh dinner, nice small servings, serve with Chickpea, avocado & feta salad , great summer dinner

  • 8 chicken thighs , with out bone
  • 3 tbsp flour
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • 1 tsp paprika
  • ½ cup cheddar cheese, shredded
  • 8 slices deli ham
  • toothpicks
1) De-bone the chicken thighs if there is bone in.
Mix together flour , chili powder, paprika, garlic powder, and salt on a plate, mix well. Pound the chicken flat, between too sheets of vitawrap ( be careful not to pound them to flat ) Dredge the chicken in the flour and place on another plate, cover and chill in the fridge for 45 min -60 min.
Pre-heat oven on 170℃ hot air oven.
Grease a baking dish with cooking spray, Take out the chicken , on each piece layer with 1 piece of ham then a bit of cheese ( use more if you want to ). Roll up and secure with toothpicks , place in the baking dish and let it cook ½ hour, take out and turn the chicken and give it 20-30 min more. Serve it with a green salad or other vegetable.
