Creamy linguine with sausage and veggies

Simply the best !! Serious creamy pasta and great for any family dinner, great taste and great to lure some veggies in your kids.

  • 1 cup water
  • 1 chicken bouillon cube
  • 8 ounces uncooked linguine
  • 3 cups small broccoli florets
  • 1 ½ tablespoons butter
  • 1 cup chopped onion
  • 8 ounces sliced mushrooms
  • 2 garlic cloves, minced
  • 12 ounces favourite hotdog sausage, sliced
  • 1 julienne-cut carrot
  • 9 ounces mascarpone cheese
1) Cook linguine according to the package, add broccoli after 5 minutes cook 3 minutes or until pasta is al dente. Drain through a sieve over a bowl, set aside
2) Melt butter in skillet ; Add onion and mushrooms to pan; sauté 5 minutes, Add garlic, and sauté 1 minute. Add sausage, and carrot and cook for 6-10 minutes, or till sausage is cooked , stirring occasionally.
3) Add 1 cup water, and bouillon cube, stir to dissolve then add cream cheese and stir, let it simmer on low heat for 10 minutes, until sauce have thickened, before stirring in the linguine and broccoli, heat though for 3-5 minutes. Garnish with parsley and serve
