Easy lamb ragù

Easy to make an awesome dinner if you have leftover lamb meat.
4 Servings

  • 500 g Leftover Lamb meat
  • 1 Onion, finely chopped
  • 1 Yellow bell pepper , sliced
  • 4 Clove Garlic, finely chopped
  • 500 g Store bought tomato/pasta sauce
  • 400 g Canned tomatoes
  • ½ tsp. Grounded coriander
  • ½ tsp. Grounded cumin
  • ½ tsp. Salt, optional
  • Freshly ground black pepper
  • ½ cup Black olives, Pitted (invest in some good ones)
  • Parsley, for garnish
  • Olive oil

1) Heat cooking pot, and add olive oil, and sauté onions and garlic

Turn down heat add diced lamb meat , tomato sauce and canned tomatoes, mix well

Stir in spices and olives, cover and simmer on low heat for 1 hour.

4)
Garnish with chopped parsley and serve
