Edamame salad

Fresh and delicious summer said good for all kinds of meats and fish

  • 1 lb. frozen shelled edamame, (450g)
  • 1 cup frozen chopped corn
  • 1 chopped red bell pepper
  • ¾ cup sliced green onion
  • ½ cup finely chopped red onion
  • ¼ cup chopped cilantro
  • ½ cup fresh lemon juice
  • 2-3 tablespoons olive oil
  • Chopped fresh garlic and ginger (to your taste)
  • Chopped green chilies (to your taste)
  • salt (to taste your taste)

1) Microwave edamame and corn for about 5 mins, until they are just cooked. Do not over cook or else the salad would not be crunchy. Let the mixture cool off. Once it is cooled off, combine it with red bell pepper, green onion, red onion, cilantro, garlic, ginger, and chilies.  In a separate bowl, prepare dressing by whisking lemon juice, olive oil, salt. Mix thoroughly the dressing with veggies. Edamame Salad is ready to be served.
