Fennel salad with creamy avocado

Great addition when serving fat food, such as duck, very refreshing and tasty

  • 1 Avocado, skin and pit removed
  • 1 tablespoon Onion, diced
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • teaspoon Salt
  • Black Pepper, to taste
  • 460 g Fennel, very thinly sliced
1) Combine the avocado, onion, lemon juice, oil, salt, and pepper in a food processor until smooth, about 1 min. Toss the avocado dressing with the fennel and serve.
