Fresh asparagus & ham tartlets with prosciutto

Great appetiser / dinner for a posh dinner party or something delicious for a everyday dinner ( recipe basic tartelets )

  • 10 tartlets
  • 500 g fresh asparagus, roughly chopped
  • 25 g butter
  • 2 tbsp all purpose flour
  • pinch salt & freshly ground black pepper
  • 300 ml asparagus water
  • 250 ml heavy cream
  • ½ cube chicken bouillon
  • 250 g cooked ham, diced
  • 80 g slices of prosciutto
1) Bring water to a boil in a big cooking pot. Add a pinch of salt, when the water boils add the asparagus and cook for 2 min. Take out the asparagus and place them in a sieve , keep the asparagus water, let the asparagus cool down for a ½ min. under cold water, set aside.
Melt butter in a medium-large casserole, whisk in the flour, till it gets lumpy. Slowly add asparagus water (300ml) while whisking all lumps out, add heavy cream and ½ bouillon cube( still whisking ) while it get thick to your liking. If it gets to think just add more asparagus water
Add ham and asparagus while staring . Warm the pre-made tartelets in the own . Add the asparagus mix to the tartelets cups ,Rip/tear the prosciutto in smaller pieces and place on top of the tartelets and serve. 2 each for starters for 5,
