Gnocchi with gorgonzola and walnuts

Gnocchi GorgonzolaWalnuts
Dinner tonight, September 2, 2015
Delicious dinner for two or great for a appetiser for four.
2 servings
  • 500 g Gnocchi
  • 150 ml cream
  • 50 g Gorgonzola (or other blue cheese of your choice), crumbled
  • 50 g Parmesan, grated
  • 2-3 tbsp Walnuts (finely chopped)
  • 2 tsp lemon juice
  • salt & pepper to taste
  • fresh parsley (optional)
1) Bring a large pot of water to the boil and add salt.
2) In a small sauce pan over a low heat, combine the cream, Gorgonzola and Parmesan and stir until the cheese is melted.
3) Remove from the heat and add the Walnuts, lemon juice and seasoning.
4) Drop the Gnocchi into the boiling water and allow for them to come up to the surface. Drain the Gnocchi and toss into the Gorgonzola sauce.
5) Serve warm with fresh parsley and a bit of extra crushed Walnuts.
