Grilled chicken souvlaki salad with tzatziki dressing

Just really delicious and really tasty salad, grat for any lunch but I chose to serve it as a dinner for me and my husband , and it was so good

  • 1 lb. boneless and skinless thighs, cut into bite sized pieces
  • 2 cloves garlic, chopped
  • 1 lemon, juice and zest
  • 1 tablespoon yogurt
  • ¼ cup olive oil
  • 1 teaspoon oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 cups romaine lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • ¼ cup red onion, diced
  • ¼ cup kalamata olives, pitted and coarsely chopped
  • ¼ cup feta, crumbled
  • ¼ cup pre-made tzatziki sauce

Marinate the chicken in the mixture of the remaining ingredients in the fridge for 30 minutes to overnight. Grill the chicken over medium-high heat until cooked, about 2-4 minutes per side.

FOR THE SALAD: Assemble the salad and enjoy!
