Italian inspired pasta dish

Great dish for a warm summernight, light and tastefull

  • 250 g Your favourite pasta
  • 1 tbsp. Olive Oil
  • 1 Red bell pepper, diced
  • 1 Aubergine , diced
  • ½ tsp. Dried Rosemary
  • 250 g Tomato sauce
  • 5 Hotdog sausages, diced
  • Salt
  • Pepper
  • Parsley, for garnish
1) Cook pasta according to the package
Meanwhile heat olive oil over medium heat in a deep frying pan, add bell pepper,aubergine and sausage, sauté for about 15 min
Add tomato sauce and rosemary and a dash of salt and pepper, turn down to low heat and let it simmer for about 10 min. more.
Add the pasta to the tomato sauce, garnish with parsley and serve.
