Juicy roasted garlic chicken

If you love chicken , this will be your go to chicken recipe, you can mix the butter with all kind of herbs after your liking

  • 1 (3 pound) whole chicken, giblets removed
  • salt and black pepper to taste
  • 1 cup butter, divided
  • ½ cup parsley, finely chopped
  • 4 cloves garlic, finely chopped

1) Preheat oven to 350 degrees F (175 degrees C).

Mix / stir together soften butter , finely chopped parsley and finely chopped garlic in a bowl

Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Place 2 tablespoons garlic butter in the chicken cavity. Arrange 2 tsp under the breast skin and press so the butter cover under the skin, of the remaining butter place/smear it around the chicken's exterior.

Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
