Mac N'cheese bacon edition

Always delicious with some comfort food, and then bacon, for sure a bacon lovers dream dish
4 servings
  • 2 x lemons
  • 2 large onions
  • 6 cloves of garlic
  • 70 g unsalted butter
  • 3 x anchovy fillets
  • 1 large glass of white Burgundy
  • 60 g plain flour
  • 1.4 litres of semi skimmed milk
  • 2 teaspoons of English mustard
  • 600 g Amori pasta
  • 80 g mature cheddar
  • 80 g Gruyere
  • 150-200 g bacon, diced and cooked to crisp and golden
  • Olive bread sticks (for topping) or season bread crumbs
  • Parmesan (for topping and serving)
1) Put the pasta on to boil in salted water, take out just before Al Dente
2) In a large pot, fry the bacon till crisp and golden, let it drip off on kitchen towel and set aside. Then fry off the onions and garlic in the same pot, until golden brown
3) Add the white Burgundy and simmer off
4) Add the anchovy fillets, butter and mustard
5) Once the butter has melted, add the flour and mix into a paste
6) Now gradually add the milk until you have a smooth bechamel sauce
7) Add the cheddar and Gruyere, melt into sauce Ensure the sauced is completely mixed together and smooth, then add the pasta
8) Transfere to a baking dish, and stir in the bacon , leaving a bit for garnish
9) Crumble the olive bread sticks into a fine crumb and dust over the top
10) Sprinkle with Parmesan and the left over bacon and place in the oven for 25 mins
11) Take the baking dish from the oven and serve.
