Meat cheese nacho dinner

Really a Nacho dish, but with out the tortilla chips getting soft in the bottom, great and easy way to make finger food , and great for TV dinners
4 servings

  • 1 lb ground beef
  • 400 g diced bacon
  • 1 red onion, finely chopped
  • 1 onion, finely chopped
  • 200 g black olives, sliced
  • 1 yellow bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 spring onion, sliced
  • 1 handful chopped flat-leaf parsley
  • pickled jalapeños, finely chopped, as much or less you like
  • 2 cups cheese dip, or shredded cheddar
  • 2 cups Tomato chili garlic sauce, more or less depends how you like the texture to be
  • 1 tsp chili powder
  • tortilla chips enough till 4

1) In a hot skillet cook the bacon to golden and crisp and set aside

2) Brown meat in fat from bacon in a skillet and add the tomato sauce and chill powder , and let it cook till the water is evaporated

3) Add beef and tomato mixture to an ovenproof dish, and mix 1 cup of shredded cheddar cheese so it melts. Sprinkle the rest (1 cup) of the cheddar on top ( if dip, spread it on the top), and let it melt in the oven for 10-20 min on 175-200℃

4) Meanwhile prepare the veggies and mix them in a bowl and add the flat-leaved parsley, and set aside.

5) When cheese is melted take it out of the oven and distribute to 4 equally sized bowls, and add the fresh raw veggie mix on top. Serve hot and with tortilla chips.
