Pork, cabbage and curry

Dinner tonight, November 27, 2014
So easy to incorporate cabbage in your dish, and it really taste yummy, and really really easy to make. Don’t add chili and to hot curry if your kids is going to eat it
2-4 servings

  • 500 g pork loin , minced
  • 2 carrots
  • ¼ head of cabbage, finely sliced
  • 1 deciliter coconut milk
  • 1 chili, sliced
  • ½ tsp. fennel seed
  • 1 tbsp. curry powder, or after taste
  • 1 onion, diced
  • 2 cloves garlic, finely chopped
  • 1 cm fresh ginger, grated
  • 1 tsp. low sodium soy sauce
  • oil for cooking
  • roasted coconut flakes, for topping

1) In oil sauté onions, garlic, chili, fennel seeds, curry and ginger, about 2 min

Add the meat, when the meat is browned add coconut milk, cabbage and carrots and cover and let it simmer for 15 min on medium to low heat, do stir frequently.

Add salt and pepper to taste, top with roasted coconut flakes and lime juice

aHousewife notes:
Serve with rice and a bit fresh lime juice , also great to eat without rice.
