Quick chicken soup with chorizo and zoodles

Its the season for influenza and common colds… what is better than chicken soup !!?

  • 1 L. chicken stock
  • 4 carrots, peeled and finely diced
  • 2 stalks celery, finely diced
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 100 g deli cut chorizo, sliced
  • 1 tbsp olive oil
  • 500 g chicken breast, cubed
  • 4 zucchini, made into zoodels

1) In a dutch oven, heat olive oil over medium eat. Sauté carrots, onion , celery and garlic, for 5 min. add

Add chorizo and chicken, sauté until chicken is cooked through, add chicken stock and let it simmer for 20 min on low heat before serving, place zucchini zoodels in 4 bowls and pour over the soup
