Rice paper roll with 2 x dipping sauce

THE perfect finger food ever, so delicious and so easy, and only your fantasy sets the limit of what you can put in the rolls. This is just what you need for the basic rice paper rolls.

  • 1 package Rice Paper
  • 1 Cucumber, finely sliced
  • 3 Carrots, finely sliced
  • Egg noodles , cooked after direction on the package
  • 500 g Pork, chicken, shrimps, duck , or whatever you like to put in.
  • Chili sauce
  • 2 tbsp Cane Sugar
  • 2 tbsp Rice wine vinegar
  • 2 dl Japanese soya sauce
  • 1 tbsp Fish Sauce
  • 1 tbsp Freshly grated ginger
  • ½ tbsp Sesame Oil
  • ½ tbsp Sambal Oleke
  • Peanut Sauce
  • 1 cup smooth peanut butter
  • ¼ cup low-sodium soy sauce
  • 2 teaspoons red chili paste, such as sambal Oleke
  • 2 tablespoons dark brown sugar
  • 2 limes, juiced
  • ½ cup hot water
  • ¼ cup chopped peanuts, for garnish

1) Prepare the noodles according to the package and set aside

Slice carrots and cucumbers and set aside

Prepare pork, chicken, shrimps , duck or what every you like to eat or all of them, its up to you. Slice meat thinly, there is no need to slice the shrimps if using them.

Chili sauce: Mix sugar and rice wine vinegar, and stir till sugar have dissolved. Add soya, fish sauce, ginger, sesame oil and samba oelek and serve in a pretty bowl.

Peanut sauce: Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it. Pour the sauce into a nice serving bowl and garnish with the chopped peanuts. (You can add a bit of mabel syrup and 4 tsp of sesame oil)

6) Dip the rice paper in a bowl with cold water ( or prepare according to the package ), start fill in noodles, carrots, cucumber, pork, duck, roll, dip and eat.
