Roasted lamb culotte

Just love lamb, and its so easy to make. Great for those special guest or for that special date night with your hubby

  • 4 lamb culottes
  • 5 sprigs of thyme
  • 2 cloves garlic
  • salt
  • pepper
  • 12 spring onions
  • 100 g green beans
  • 2 heads of romain lettuce
  • 20 g butter
  • ½ bunch parsley
  • ½ lemon

1) Remove tendons and the fat on the lamb culotte ( leave a bit of fat on ). Heat a pan and place lamb culotte on pan fat side down along with thyme and whole garlic cloves. Brown well on both sides

2) Place lamb in an ovenproof dish , season with salt and pepper. Bake in the oven on 180ºC for 10-30 minutes ( depending on size and oven ) , or done till your liking . Take out and let them rest for 10 minutes.

3) Prepare green onions and beans. Cut the green beans to smaller pieces. In a sauté pan or in a pan with high sides , add butter, when butter is melted add green onions and green beans, sauté for a few minuts till the veggies absorb the butter and becomes thender.

4) Cut romaine in smaller pieces and roughly chop the parsley, and add to the pan, stir well , turn off the heat and season with salt and pepper. Do not cook the lettuces so much - they have to be a bit crisp. Serve as a side to the lamb
