Rib roast with pancetta



Dinner tonight, 15 August , 2018
So god , and such a great way to impress dinner guest , serve with sauce and potatoes and any kind of fresh salad.

  • 1 rib roast with 6 ribs ( Veal )
  • 12 slices pancetta
  • rosemary
  • tarragon
  • salt
  • black pepper, grounded

1) Take out the rib roast from the fridge 2-3 hours before preparing, Lay on a cutting board and pat it dry with kitchen towel , Sprinkle with a good pinch of salt.

Preheat oven 160
Pat dry and add ground black pepper and top it with rosemary and tarragon , top it with pancetta. Use a string to keep pancetta on its place

3)
Cook until the meat center temperature is 55 for rosa , 60 for rosa-medium. Let it rest ½ hour covered with foil.
