Spicy cauliflower Frittata with shrimp

Dinner tonight, January 2, 2019
This is great for breakfast, lunch or dinner, very mild to taste, but so delicious
4 servings

1 teaspoon rapeseed oil
500 g cauliflower
1 piece of red chili pepper
1 tablespoon fresh ginger
2 eggs , whole
4 egg whites
1 ½ dl Creme fraiche 5%
½ teaspoon coarse salt
freshly ground pepper
1 teaspoon rapeseed oil
350 g raw prawn
½ teaspoon coarse salt
125 g of snap peas
fresh coriander

1) Let the oil get warm in a large pan or in a saute pan (which can go into the oven). Fry cauliflower, chili and ginger for approx. 6 min. - When cauliflower is almost tender - it may have a bite.

2) Whip egg, egg whites and cream fraiche, salt and pepper well together. Pour the mixture over the cauliflower and let it solidify on the bottom and edges. Put the pan in the oven and bake the frittata until it is golden and solidified

3) Let the oil get warm in a pan.Stir fry shrimps for approx. 2 min. sprinkle with salt. Remove the frittata from the oven. Top with shrimp, and coriander.
