Spicy cucumber salad

Great spicy, and hot cucumber salad, great to compensate for very fatty food, chicken, pork or meat
4 servings
  • 1 cucumber, finely sliced
  • ½ tsp. salt
  • 1 ½ tbsp. sugar
  • 2 tbsp. rice wine vinegar
  • ½ tbsp. Sambal oelek , (ground fresh chile paste or other chili paste)
  • 1 tbsp. soy sauce
  • 1 medium red onion, finely sliced
1) In a sieve add sliced cucumber and sliced onion and sprinkle with the salt, let it drain for 30 min. After 30 min, rinse with loads of cold water, pat it dry with kitchen towel and set aside meanwhile you make the dressing
2) In a bowl mix together rice wine vinegar and sugar, stir till the sugar is dissolved
3) Whisk together the rest of the ingredients and spoon over the cucumbers, serve immediately .
