Thai salad with edamame and peanut butter sauce


Lunch today, March 8, 2018
A very fulfilling salad, great for any lunch. To much dressing ? You can always use it for dip sauce for other veggies.
4 servings

300 g edamame beans
1 broccoli, in small florets
½ small red cabbage , roughly chopped
1 cucumber , sliced
3 spring onions , sliced
1 a big handfull of Coriander, roughly chopped
½ cup, roasted salted peanuts
2 tbsp. Black sesame seeds
Peanut butter dressing
3 tbsp. soya
3 tbsp. peanut butter
Juice from 1 lime
1 red chili, finely chopped
1 clove of garlic, finely chopped
2 tsp finely treated ginger root
3-6 tbsp. water

Steam the broccoli in a pan with steam insert, or with a little water at the bottom for 1-2 minutes. Mix all the ingredients together into a large bowl. Make the dressing

Add the salad in a serving bowl and serve the peanut butter dressing
